I welcome you to follow my journey about Gluten Free living. I started having symptoms in March 2004 and after 18 doctors and every test imaginable, it was determined that I am gluten sensitive. Only 7% of the population are gluten sensitive and it’s difficult to diagnose since it is an autoimmune disease. Almost 30% of the population are celiac, which to me says something about the food we eat. I am developing this blog to share my research and thoughts with others in the GF community.
